Tuna Casserole--Very Midwestern

My mom's recipe for tuna casserole--the perfect alternative to meat loaf and red cabbage:
TUNA CASSEROLE
The Cream Sauce:
3 tablespoons butter or margarine (butter is better)
3 tablespoons flour
salt (to taste)
1-1/2 cups milk
melt the butter in a saucepan over medium heat and add the flour and salt, stirring briskly with a whisk to make a thick paste. Slowly add the milk, stirring it with the whisk until thick and creamy.
The Rest:
Two small cans of chunk light tuna, drained
cheese crackers, crushed
small can of sliced black olives, drained (optional, but they make it even better)
empty one of the cans of tuna into the bottom of a medium casserole. If using the black olives as well, empty half of the can of olives on top of the tuna now. Cover with half of the cream sauce, and then a layer of crushed cheese crakers. Repeat the layers again, and then place the uncovered casserole in a 350-degree oven and bake for 30 minutes. Serves four regular appetites, or two hungry teenagers . . . |

Here We Go Again--Tomato Rice

Yet another recipe, this one from THE JOY OF COOKING--the quintessential midwestern cookbook:
TOMATO RICE WITH CHEESE AND MUSHROOMS
2 cups peeled and chopped tomatoes (fresh or canned)
1 tsp sugar
1 tsp salt
1/8 tsp pepper
2 cups boiled rice (start with 1/2 cup uncooked rice)
1 cup diced american cheese (I use Kraft Sharp Cheddar slices, which used to be Kraft Old English slices, which used to be plain old Kraft American Cheese when I was a young 'un)
1 green pepper, sliced
1 cup canned mushrooms
1/2 cup commerical bread crumbs(Regular or Italian)
2 tbsps butter, cut into slices
Combine the first eight ingredients in a bowl and then place them into a baking dish. Top them with the bread crumbs and then dot the top with the sliced butter. Bake the casserole in a 350-degree oven for 40 minutes. Makes a great side dish for chicken or beef. |

"Bangers and mash"

O.k...Here's an English and Irish recipe.
Fry 2 lbs of sausage links in a skillet with a whole, chopped onion.
Make a cup of brown gravy from a mix.
Make mashed potatoes equalling 8 potatoes.(I cheated, used Hungry Jack)
Pour half of the brown gravy in the bottom of a casserole/baking dish.
Put the sausage and onions in the same dish.
Cover the sausages and onions with the mashed potatoes.
Pour the remainder of the brown gravy over all.
Bake in oven at 425 for 20-30 minutes,till is golden brown.
Have fun.
8 potatoes (or instant mashed)
2 lbs link sausage. (Smoked sausage works too !)
1 large onion.
1 packet brown gravy mix.(Can gravy is o.k.)
salt and pepper
butter/margerine for the potatoes [:p]

Spaghetti Sauce

I seriously doubt that this will transport you to Sunny Italy--I got the recipe off of a box of Mueller's Spaghetti many years ago and it has probably mutated in my memory a bit since then:
1 lb. ground beef (I use ground sirloin)
1/2 cup chopped onion
3 cloves of garlic, minced
2 large cans whole, peeled tomatoes
1 small can tomato paste
1/8 tsp black pepper
1/4 tsp oregano
1/4 tsp basil
1 tsp salt
2 tbsps sugar
Brown the beef, onion, and garlic together, then drain off excess fat and juices. Add the whole tomatoes, chopping them up with the edge of a large spoon, the can of tomato sauce, and then the seasonings. Combine thoroughly and then allow to cook slowly over medium-low heat, for an hour if possible. Nothing terribly Italian about it, but it seems to keep most people I know happy . . . |

Red cabbage

Cut the bottom off of a full red cabbage
Cut the cabbage into quarters.
Place all pieces into a large (2 qt) pot, with 1 cup vinegar and cover with water.
Cover, boil over a low fire till the liquid is almost gone.(Do not burn the bottom of your pan.)
When you still have about 2 inches of water in the pot, add a couple of large spoons of sugar, and stir the now softening cabbage till mixed.
(At this point,some people even add pieces of bacon to the mix)..
When the cabbage has cooked to the correct softness, (as desired), drain and eat.
(Yeah...People really eat this stuff, and Shep's mother was German and definitely ate/cooked it !!!!!!)..[:o)]

Indiana Meatloaf

Preheat oven to 375f
Wash your hands and DO NOT wear anything with long sleeves.
Turn on your kitchen sink, more than a trickle, hot water only.
(You will return to this sink in about 4 minutes)
In a large mixing bowl, put in :
3 lbs lean ground chuck.(NOT hamburger as the grease screws up the process !!!!!)
2 eggs (holds all together and allows a "crust"(I like a crunch)
1 whole,large onion,diced medium (so you can see the onion)
1 whole package of saltine type crackers,(a quarter of a box), crushed by hand.(The crackers, not the box[:o)])
A couple of squirts of McIlhenny hot sauce(MY Plug)..
Couple of dashes of pepper, salt,thyme,rosemary.
Approx 1/6 cup water to help mix it all up WITH YOUR HANDS!!!!!!!
Put the meatloaf in 1 or 2 loaf/cake pans and pat down kinda tight, with a flat top.
You may put some tangy ketchup over the top in places,(kinda liberally but you don't need to smother it).
Put this in the oven for a full hour.
**Now, go wash your hands with the sink you already left running, the water is hot now and will get the grease off without screwing up the faucet handles..
The finished product is best served with red cabbage or mashed potatoes..................[:p]

Meatloaf - The Sequel

Currently my favorite recipe, other than one of those meatloaf seasoning packets, which is just lazy and decadent.
2 lbs. ground sirloin (more expensive, but much less grease)
1 small onion, finely chopped
1/2 red bell pepper, chopped
2 cloves garlic, minced (or equivalent garlic powder--you'll be getting sick of chopping things by now)
1 cup bread crumbs
2 eggs, slightly beaten
3/4 cup ketchup or tomato sauce
2 tablespoons mustard
1/4 cup chopped fresh parsley
4 slices bacon
heat oven to 350 degrees. Combine all ingredients but the bacon slices in a large bowl and mix well (your hands will look as if--well never mind). gently mound the mixture in a 9 x 5 loaf pan (preferably one that has holes in the bottom and a second pan to allow for drainage). Top the loaf with the for slices of bacon and bake for 60-80 minutes. Remove from oven and allow to set for 15 minutes before slicing and serving. It will go nicely with mashed potatoes and red cabbage, but it would probably go nicely with green beans and couscous as well. Just be careful not to laugh while eating couscous . . .

REAL Macaroni and Cheese

1 cup macaroni - boiled
2/3 cup milk
1 or 2 eggs
1 cup grated cheese
salt, paprika
a few grains cayenne
1/4 cup bread crumbs
Heat oven to 400 degrees. Butter a casserole and add alternating layers of macaroni and grated cheese, ending with cheese on top. Combine milk, eggs, and seasonings and pour over macaroni and cheese. Top with bread crumbs and bake until done (no set time given, but at least 20 minutes or so)
One variation on the above recipe is to replace the milk with the same amount of whipping cream, which will give you a richer, firmer custard. |

"Hungarian" Stuffed Cabbage

My wife's grandmother was an emigrant from Hungary who settled in Hessville by way of Ellis Island and then East Chicago. Here is her stuffed cabbage recipe with some minor modifications that have been made over the years by my wife.
STUFFED CABBAGE
1 lb. ground beef
1 cup rice, uncooked (not minute rice)
1 egg
1 med. onion
1 qt. (large can) tomato juice
1 tsp. salt
1/4 tsp. black pepper
1/2 tsp. paprika
1 head cabbage (buy the largest head you can find)
1 ring Polish saugage, cut into 2-inch pieces - or -
ham bone and left-over ham from previous meal
optional: 1 can stewed tomatoes
1. Boil cabbage - separate leaves.
2. Saute finely chopped onion in oil.
3. Mix together thoroughly in large bowl: ground beef, rice, egg, cooked onion, and spices.
4. Roll portions of mixture into cabbage leaves (about the size of a medium egg - it expands upon cooking).
5. Line large pot with shredded left-over cabbage; then place stuffed cabbage leaves in pot with Polish sausage pieces or ham bone and scraps. Also add shredded cabbage on top.
5. Add tomato juice, stewed tomatoes if desired, a little water if necessary to cover all cabbages, and bring to a boil. Then simmer, covered, until fork goes in easily, about 2 to 3 hours.

HOW TO PREPARE CABBAGE
- Cut out core first in a cone shape.
- Completely cover head with cold water, then bring to a boil. Boil about 5 minutes, then remove from water and drain.
- Carefully begin taking off leaves. Cut some of the rib off each leaf to make leaves more limber and easier to roll.
- If leaves are still a little too stiff, soak them in water a bit longer. (They will not be real soft, but should not be stiff enough to crack.)
- Roll from rib end of leaf. Tuck in ends with your fingers after filling and rolling.

DRM is actually a misnomer. It restricts the consumer from doing perfectly valid and reasonable things with music they own. I only need to record audio for a small presentation and with no avail!!!
Just searched online and tried Soundtaxi software and think it is just great. Simple to use and it works as advertised.

Russ, according to the IMBD, it says that you worked on a documentary on W.C. Fields. I'm wondering if you have ever seen a film of his called "Million Dollar Legs", which has him play a leader of a small nation called Klopstockia that enters a team in the 1932 LA Olympics. I remember watching it in college in the early '80s on the late, late show until I got too tired to watch it, so I never saw the ending. |

Aroma and Aural trivia

The trivia test below got me to thinking.... I do remember a Shep WOR show in which he discussed how certain smells trigger early memories- think two he mentioned were cutting open a fresh cantelope or watermellon on a hot summer day.
Two that come to me right away: for reasons known only to the 3M Corporation, the adhesive they now commonly use on the frosted Scotch tape used to only be used on the colored tapes they put out for Christmas wrapping.... so that smell instantly makes me think of Christmases as a kid.
And- back in the nether reaches of my medicine chest I have a pristine tube of Brylcream! I'm sure I haven't put any on my head since about 1967; but every now and then when I see it I'll open the cap and take a sniff... Ahhhhh!
In the not-so-obvious, what smells or sounds trigger early memories for you? |
