Meatloaf - The Sequel

Currently my favorite recipe, other than one of those meatloaf seasoning packets, which is just lazy and decadent.
2 lbs. ground sirloin (more expensive, but much less grease)
1 small onion, finely chopped
1/2 red bell pepper, chopped
2 cloves garlic, minced (or equivalent garlic powder--you'll be getting sick of chopping things by now)
1 cup bread crumbs
2 eggs, slightly beaten
3/4 cup ketchup or tomato sauce
2 tablespoons mustard
1/4 cup chopped fresh parsley
4 slices bacon
heat oven to 350 degrees. Combine all ingredients but the bacon slices in a large bowl and mix well (your hands will look as if--well never mind). gently mound the mixture in a 9 x 5 loaf pan (preferably one that has holes in the bottom and a second pan to allow for drainage). Top the loaf with the for slices of bacon and bake for 60-80 minutes. Remove from oven and allow to set for 15 minutes before slicing and serving. It will go nicely with mashed potatoes and red cabbage, but it would probably go nicely with green beans and couscous as well. Just be careful not to laugh while eating couscous . . .
