Preheat oven to 375f Wash your hands and DO NOT wear anything with long sleeves. Turn on your kitchen sink, more than a trickle, hot water only. (You will return to this sink in about 4 minutes) In a large mixing bowl, put in : 3 lbs lean ground chuck.(NOT hamburger as the grease screws up the process !!!!!) 2 eggs (holds all together and allows a "crust"(I like a crunch) 1 whole,large onion,diced medium (so you can see the onion) 1 whole package of saltine type crackers,(a quarter of a box), crushed by hand.(The crackers, not the box[:o)]) A couple of squirts of McIlhenny hot sauce(MY Plug).. Couple of dashes of pepper, salt,thyme,rosemary. Approx 1/6 cup water to help mix it all up WITH YOUR HANDS!!!!!!! Put the meatloaf in 1 or 2 loaf/cake pans and pat down kinda tight, with a flat top. You may put some tangy ketchup over the top in places,(kinda liberally but you don't need to smother it). Put this in the oven for a full hour. **Now, go wash your hands with the sink you already left running, the water is hot now and will get the grease off without screwing up the faucet handles..
