Here We Go Again--Tomato Rice

Yet another recipe, this one from THE JOY OF COOKING--the quintessential midwestern cookbook: TOMATO RICE WITH CHEESE AND MUSHROOMS 2 cups peeled and chopped tomatoes (fresh or canned) 1 tsp sugar 1 tsp salt 1/8 tsp pepper 2 cups boiled rice (start with 1/2 cup uncooked rice) 1 cup diced american cheese (I use Kraft Sharp Cheddar slices, which used to be Kraft Old English slices, which used to be plain old Kraft American Cheese when I was a young 'un) 1 green pepper, sliced 1 cup canned mushrooms 1/2 cup commerical bread crumbs(Regular or Italian) 2 tbsps butter, cut into slices Combine the first eight ingredients in a bowl and then place them into a baking dish. Top them with the bread crumbs and then dot the top with the sliced butter. Bake the casserole in a 350-degree oven for 40 minutes. Makes a great side dish for chicken or beef. 0
